Dec 9 (2022) Enggano: Making the Donuts and Saying Goodbye


I hated to leave Enggano, but everything must end. I spent my last day making donuts. When I visited this family the first of the week, Trisia (really that is her name) shared her homemade donuts. They are amazing!!! She sells them in the village. I went on and on about how good they are and I would love to have the recipe. You know like home I thought she would just GIVE me the recipe. No. She wanted to SHOW me the recipe. I spent Friday afternoon learning how to Make the Donuts. I do not think Krispy Kreme or Dunkin have anything to worry about. I am pretty sure I will never be able to make these at home, but I intend to try. Like most great chefs she did everything by weight. There are 2 videos, because we had to wait 30 minutes for the donuts to rise before she fried them.

We made the dough–see the video. The video is for Mike–he says my videos are way too short. I wish I remembered to turn the camera sideways. I hate the videos when the camera is up and down. This is a long one (26 minutes). Good donuts take time. Like most great chefs she did everything by weight. You need to watch the video for the secret ingredient–OK I will just tell you. Potatoes. She used potatoes to make the donuts!! After the dough rested for 30 minutes, we rolled it into small balls. Zulvan wanted holes in the donuts so she gave us metal drink lids to cut the holes. So smart!

Then we fried the donuts. Watching her fry donuts made me think of watching the donuts go through the fryer at Krispy Kreme. She said only turn them once! If you want to see her frying the donuts there is a video below the picture–it is ~6 minutes.

She made a glaze by melting a big glob of margarine with sweetened condensed milk. I could not wait for her to make the glaze. I ate 2 before she could get the butter melted!! She puts the glaze on the donut then adds sprinkles. She also made some chocolate covered donuts. My favorite was with the glaze only. The ugly donuts with the places that look like cracks are my donuts. Her donuts are perfect.

The only thing left to do is clean up. I offered to wash the dishes, but she insisted I sit and have tea.

All good things must come to an end! I enjoyed my time. Goodbye Enggano….

    • Pretty much everything we do takes place on the floor. Sometimes I see families eating at a table, but most of the time we and cook on the floor.

    • Wow!!! So cool! She can send us some. Of course by the time we get them (if that even happens), they will not be good.
